One day, a product manager and a marketing professional were moving in a lift, and the same question was buzzing in their head. That’s how Vishal Sabikhi and Udit Kalra started Flex Cookie. A simple brainstorming session inside an elevator transformed into a business. They were craving something sweet but also wanted protein. Calories didn’t matter in that moment, but the priority was something that actually tasted good and packed protein.
The next day, they started experimenting and noticed that in India, no one was really building protein cookies properly. Most protein snacks felt like a compromise. One has to either sacrifice taste or nutrition. But Vishal and Udit wanted to create a delicious cookie you genuinely enjoy, which helps you hit your dietary goals.
Premium Ingredients for Protein Cookies
When asked about what their cookie really consists of, Vishal explained the core materials behind it. They are out to make a proper cookie that also packs protein, not a regular cookie with protein dumped into it. Their cookies have sugar and a little maida, and they sit around 350 to 400 calories, depending on the flavour, with each tasty treat providing 21 gms of protein.
He further goes on to explain that they could have made a cookie with less than 200 calories, without maida, without sugar, but it wouldn’t taste like a cookie. They wanted a cookie you can genuinely enjoy and feel satisfied with.
Delivering a great experience requires the best, and Vishal provided the list of ingredients they work with. Ditching the usual suspects like compound, cheap pea or soy protein, they palm oil-free chocolates and spreads, couverture chocolate, and premium proteins like whey isolate, WPC and casein.
The beginning felt easy and exciting. They baked a few batches, packed a handful of orders, and everything clicked. Early operations felt smooth, deliveries were on time, and the feedback was great, but scaling brought along new struggles.
Scaling and struggles of Flex Cookie
Moving into a commercial space meant Flex Cookie went from a handful of cookies to hundreds every day. This, along with managing inventory, tracking ingredients and packaging, coordinating vendors, scheduling production runs, and handling much higher shipping volumes, meant that smaller mistakes could now be costly.
They were forced to learn everything on the go. Scaling forced them to find better suppliers, refine recipes for consistent production, redesign packaging, tighten quality checks, and improve customer communication. According to them, the biggest ongoing challenge is balancing premium ingredients, pricing, and flavour.
One of the lighter moments of this business that they shed light on is experimenting and creating new flavours. Then, gather friends and family to try it out. These intimate taste-testing sessions usually fill the room with great aromas, smiles, and fun conversations.
Advice to Young Entrepreneurs
When asked about their learning while building Flex Cookie, they mentioned that the speed of execution is one of the most powerful advantages a startup can have. But this is easier said than done.
Early on, Vishal had posted a tweet about experimenting with protein cookies. The response was overwhelming, and within 24 hours, they had a live website, receiving 40 orders within the first hour of their launch.
That initial tweet, that one step, taught them something that MBA degrees might harp upon but not truly instil. It taught them to act quickly, launch before everything feels perfect, and keep improving as they go. This would also be Vishal’s advice to young entrepreneurs just starting their journey.
Every milestone achieved should be celebrated, but it also brings with it new challenges. Change is the only constant, and building a business from the ground up requires fixing a lot of cogs in the machine. The products and processes will keep evolving, and things rarely look the same as they did months ago. The ones who succeed aren’t necessarily the smartest or best-funded ones; they are the ones who keep learning, moving, and adapting faster than everyone else.
